4 ingredient – Energy Oat Bars – Vegan

These are so quick and easy to make and bake. Once baked and sliced you can make up a snack plate with the fruit from your weekly box! If you make these as often as I do you’ll soon memorise the recipe like me.

We love snacks like this because they have few nutritious ingredients, taste great, they are a quick bake, they are cheaper than shop bought snacks, we can make them with organic ingredients and they can be fully plant based if thats what you like.

I served mine up with apple and orange slices. It makes a super nutritious snack, great for kids too.

Ingredients: makes 12 servings

  • 200g oats
  • 100g smooth runny peanut butter (or any nut or seed butter)
  • 3 ripe bananas, mashed
  • 70g chocolate chips (or chopped chocolate)

Method:

Step 1: Preheat the oven 180ºc. Line an 8in square tin with parchment paper.

Step 2: Mash the bananas and add them to a mixing bowl along with the peanut butter and oats. Mix well and transfer into the baking tray. Scatter the chocolate chips evenly on top.

Step 3: Bake for about 20 minutes, until golden brown. leave to cool then slice into 12 squares.

Sometimes you need that quick fix to get you through the mid morning or afternoon slump!! This peanut butter fudge is the fix you need. No bake, 5 ingredients and flavours that were made for each other.

They keep perfectly in the fridge or freezer. Keep them in bite sized pieces for easy eating. The best part is that all the fabulous ingredients are available in groceries #organicingredients

Method

  1. The method could not be easier. 
  2. Make some space in your freezer- or you can let it set in the fridge.
  3. Line a small square baking tin with parchment paper 8x8inc or similar.
  4. Melt the coconut in the microwave or in a small pot. 
  5. Mix in the peanut butter, desiccated coconut, honey and half the dark chocolate. 
  6. Pour the mix into the tin and shake it lightly to get into the corners. 
  7. Sprinkle the remaining chocolate on top. 
  8. Carefully place in the freezer to set- or the fridge. 
  9. When completely set chop into bite sized pieces. 

Peanut Butter Squares – No bake

Here at Green Earth Organics we are always adding new products to the online store. When the coconut flour came in this month this recipe had to be made! 

These peanut butter squares are a real treat! Not only are they unbelievably good they might even be good for you as they are made with these gorgeous natural organic ingredients! 

They are quite filling so a small square is enough to satisfy- but go back for seconds if you must!!

Leave the plastic wrapped supermarket treats on the shelf and give them a go and let us know what you think.

  1. Line a small baking tray (8×5 inc approx) with parchment paper and cut out a spare piece of paper the same size as the tray. 
  2. Measure the peanut butter into a bowl and warm in the microwave for a minute or until it mixes easily with a spoon. (you can do this step in a small pot on the hob if you prefer)
  3. Add the coconut flour and maple syrup and mix to form a thick paste. 
  4. Tip the paste onto the baking tray and push down with the back of a spoon. 
  5. Use the spare piece of parchment paper and your hands to smooth the paste evenly into the corners of the tray, then discard the paper.
  6. Put the tray into the fridge to firm up for 10 minutes. 
  7. Add the chocolate to a bowl with the coconut oil and melt in the microwave until melted. Check the chocolate at 20second intervals so it does not burn. Mix well. 
  8. Take the tray from the fridge and pour over the melted chocolate, gently agitate to cover evenly. 
  9. Chill in the fridge again to set. Cut into squares and enjoy.
